Just in time for grilling season, Jim Koch and the brewers at Samuel Adams have teamed up with celebrated meat expert Jake Dickson to develop the Samuel Adams Boston Lager Cut. We set out to find a cut of steak that would be the ultimate beef and beer flavor combination. The brewers and Jake, owner of Dickson's Farmstand Meats, a specialty meat purveyor in New York's Chelsea Market, collaborated to develop this original beef cut which perfectly pairs with Samuel Adams Boston Lager's complex flavor profile.
Jake developed a range of different cuts of beef to try with Boston Lager. The brewer (Grant), the butcher (Jake), and the chef (our partner David Burke) had the tough job of tasting each of these in search of the perfect combination. After many "trials" they were able to come to a consensus.
The Samuel Adams Boston Lager Cut is a thinly sliced section cut from the top of the sirloin and has a tender texture and big beefy flavor. The Cut runs at a 45 degree angle to the cap of the top sirloin muscle, yielding a tightly grained steak perfect for grilling and slicing. This carving method optimizes the Cut's cooking properties and flavor potential, enhancing the pairing capabilities.
The recommended temperature for serving is medium-rare to medium. Jake suggests searing the steak on high heat for four to five minutes per side. For a more well done finish, follow the searing with four to five minutes of indirect heat in the oven. Samuel Adams Boston Lager is the perfect pairing for this specifically designed cut, the beer's upfront malt flavor matches the caramelized flavors of the meat, and its hoppy finish helps cleanse the palate in preparation for the next bite.
