Peach Cobbler
Directions
- Sift together flour, sugar, baking powder and salt. Cut in butter until crumbly. Add egg, vanilla and Samuel Adams® Pale Ale. Stir until the dough clings together. Knead gently 8 strokes. Cover and allow to sit while you prepare fruit. Roll or pat dough 3/4 inch thick and cut into rounds. Generously butter an 8 x 8 inch baking dish. Mix sugar, cornstarch, cinnamon and zest, set aside. Heat oven to 350 degrees.
- Slice peaches thickly and arrange in dish, cover with berries. Sprinkle the sugar mixture evenly over the fruit and drizzle with the Samuel Adams Cherry Wheat®. Top with biscuits and dust lightly with sugar. Bake on shelf in lower half of oven until fruit is bubbly and biscuits are golden. Cool 10 minutes before serving.

- 1 ½ cups unbleached flour
- 1/3 cup sugar
- 1 ½ tsp. baking powder
- Pinch of salt
- 6 tablespoons butter
- 1 egg yolk, lightly beaten
- 1 tsp. vanilla
- ½ cup Samuel Adams® Pale Ale mixed with 1/3 cup dry powdered milk
- Fruit Filling Ingredients:
- 1/2 to 3/4 cup sugar
- 1/4 cup cornstarch
- 1 tsp. cinnamon
- 2 tsp. finely chopped lemon zest
- 4 cups peaches (or plums or cherries)
- 1 pint blueberries
- ½ cup Samuel Adams Cherry Wheat®
