Spiced Tomato Fondue

Yield: Serves 2 to 4

  1. In a saucepan, heat the oil over medium-high heat and when hot, cook the shallots, stirring, for 4 to 5 minutes or until caramelized and soft.  After about 2 minutes, add the garlic and cook it along with the shallots.
  2. Add the tomatoes and cook, stirring, for about 5 minutes or until most of the liquid evaporates. Whisk in the olive oil and sherry and then stir in the chopped chilies. Add sugar and salt to taste and serve hot.

Ingredients

    • Serves 2  to 4
    • 1 tablespoon canola oil
    • 5 shallots, sliced
    • 2 cloves garlic, chopped
    • 1 cup seeded, chopped fresh or canned tomatoes (if canned, drain the tomatoes before chopping) 
    • ¼ cup olive oil
    • 2 chipotle chiles packed in adobo sauce, chopped (leave a little adobo on the chiles)
    • 1 tablespoons sherry vinegar
    • Sugar 
    • Kosher salt
