
Ales are defined by their top fermenting yeast. These yeasts work at higher temperatures (typically 10°-25°C) and rise to the top during fermentation to create a thick rocky head. This fermentation also takes a shorter time than lagers with only 7-8 days. The character of ales also comes through in the esters that give the beer a floral, fruity, and earthy taste.
