
The term "lager" means to store in German and that's how these beers were developed. A yeast strain began to work at cold temperatures as the beer was stored in caves. These yeasts, now known as lager yeasts, settle to the bottom to work at colder temperatures (typically 7-15°C) and for longer periods of time. The longer aging time gives lagers a smooth, clean flavor and a crisp finish.
