Winter Lager Pumpkin Bread

Her recipe for Winter Lager Pumpkin Bread combines all our favorite flavors of the season, and the addition of coconut gives it a unique taste.

Start with dry ingredients in a bowl and set aside:

1 Cup White Sugar

1-1/2 plus 2 Tbls. White or Wheat Flour (a bit heartier with wheat)

½ tsp. Nutmeg

½ tsp. Cinnamon

½ tsp. Salt

1 tsp. Baking Powder

1 tsp. Baking Soda

In a mixing bowl combine:

¾ Cup Pumpkin (fresh or canned)

¼ Cup Samuel Adams Winter Lager (flat)

½ Cup Olive Oil

2 Eggs

Add dry ingredients to mixing bowl and fold in:

1 Package (about 2.5 oz.) organic vanilla or coconut pudding mix

½ C Shredded Coconut (sweetened or unsweetened - optional)

Pour into a greased loaf pan spread evenly.  Bake in a pre-heated 350-degree oven for 50 minutes – use clean knife test. Cool before removing from pan. Refrigerate and served thinly sliced. This bread is best served cold as it brings out all the flavors.

You can also add a cup of your favorite nuts before baking and/or dust with confectioners’ sugar before serving.
