Roasted Brussel Sprouts

  • 2 cups Brussel Sprouts, peeled & halved
  • 2 slices Bacon, chopped
  • 1 Tablespoon Olive Oil
  • 1 Shallot, peeled & sliced
  • ½ cup Samuel Adams Winter Lager
  • Kosher Salt, To Taste
  • Black Pepper, To Taste
  • Fresh Lemon Juice, As Desired
  • Grated Parmesan Cheese, As Desired
  • For the sprouts: Preheat oven to 450F
  • In a large skillet over HIGH heat, cook bacon until crisp. Remove bacon from pan, leaving the remaining fat.
  • Add olive oil and cook shallots until translucent- about 3 minutes.
  • Next, add brussel sprouts and Winter Lager. Cook until beer is almost gone- about 5 minutes.
  • Place skillet in oven and cook for 15-20 minutes or until sprouts are golden and lightly charred.
  • Remove brussel sprouts from the oven, sprinkle with bacon and season with salt and pepper.
  • To serve: Drizzle with a squeeze of fresh lemon juice and top with grated parmesan.
