In a large skillet over HIGH heat, cook bacon until crisp. Remove bacon from pan, leaving the remaining fat.
Add olive oil and cook shallots until translucent- about 3 minutes.
Next, add brussel sprouts and Winter Lager. Cook until beer is almost gone- about 5 minutes.
Place skillet in oven and cook for 15-20 minutes or until sprouts are golden and lightly charred.
Remove brussel sprouts from the oven, sprinkle with bacon and season with salt and pepper.
To serve: Drizzle with a squeeze of fresh lemon juice and top with grated parmesan.
